Chef Lee and Beverage Director Patrick Emerson Shine at Critics ...

Executive Chef Frank Lee and Wine and Beverage Director Patrick Emerson of Maverick Southern Kitchens were asked to participate in the third annual BB&T Charleston Wine + Food Festival Ultimate Critics? Dinner last night. This distinguished dinner was held at Ashem Farm in West Ashley and was one of the first public events to be held at the farm since the property was donated to the Lowcountry Open Land Trust.

Chef Lee was chosen to join five other top chefs from Charleston including Jeremiah Bacon, Joshua Keeler, Michelle Weaver, Emily Cookson, Mike Lata and Sean Brock. Chef Lee?s delectable fourth course included Medallion of Veal Loin over a rich jus of braised beef tail, mustard greens, butternut squash puree and baby turnip.

Patrick Emerson, Advanced Sommelier of the Court of Master Sommeliers, provided his talents as the beverage professional at the event. Patrick mixed up the Charleston Cocktail made with Maverick Private Label Vodka and the King Edward Cocktail made with Maverick Private Label Bourbon Whiskey.? Patrick also chose the wine pairings throughout the dinner. The food and drinks prepared reflected the harvest of the Lowcountry, drawing inspirations from the setting of the dinner.

Each year the critics? dinner is held at a unique place. This year held true as well. ?Many Charlestonians remember Ashem Farm as a place for riding horses, visiting with the Ravenel and Farrow families, and a place to appreciate the beauty of untouched nature. Dating to the settlement of the first Carolina colony, the farm is a crucial piece of Charleston?s colorful history. Emily Ravenel Farrow?s recent donation of the property, which spans 55 acres in the middle of West Ashley, to the Lowcountry Open Land Trust ensures that the land will be preserved and enjoyed by generations of Charlestonians and visitors for years to come,? said the Charleston Wine + Food Festival.
